It's so hot, I can't even

I can't handle the thought of eating anything cooked this time of year, let alone standing over a hot stove to prepare it.  Here's what I ate for lunch today.  It's great with white wine.  Lots of it.

Nectarine and Corn Salad

Feeds 1 for lunch

1 nectarine, chopped
1 cup fresh or frozen corn, thawed/cut off the cob
1 radish, thinly sliced
¼ cup slivered pea pods
1 teaspoon fresh basil, chiffonaded
2-3 fresh mint leaves, chiffonaded
Salt and freshly ground black pepper to taste
1 tablespoon seasoned rice vinegar

Combine all ingredients in a big bowl.  Eat.
